In 3d (or 2d) view, how do you add items like trusses, risers, etc?

I believe it's not possible in 2d, in 3D view use "custom items" under the hamburger menu on the left

You can draw them by yourself, there are several open source 3d programs, or search online for models ready to download, in the menu above mentioned you'll see the supported formats.
